Delicious Fried Vegetable Patties

Fried vegetable patties: Delicious vegetarian Paleo patties made from various vegetables, which you can mix and match. For example, you can replace the sweet potatoes with pumpkin or add your favourite herbs. By changing up vegetables, you can create new flavours each time!

Ingredients:

2-4 tablespoons coconut or olive oil (for frying the patties)

1/2 cup almond flour (or you can grind almonds in a spice grinder)

1 egg

1 sweet potato, peeled and grated (using a standard box grater, the same goes for the other vegetables)

1 carrot, peeled and grated

1 courgette, grated

1 onion, peeled and grated

1/2 cup white cabbage, grated

1/2 cup chopped herbs (parsley, coriander, dill etc.)

1/2 cup coconut milk or 1/3 cup rice and almond milk

1/2 teaspoon salt

1/4 – 1/2 teaspoon ground black pepper

1/2 teaspoon cumin

Instructions:

  1. Mix the grated vegetables (sweet potato, carrot, courgette, onion and cabbage) in a large bowl. Then combine the chopped herbs, almond flour, egg, coconut milk, salt, pepper and cumin into the mixture.
  1. To shape the patties take about a tablespoon of mixture, roll it into a ball and then flatten it slightly in the palm of your hand.
  1. Heat 1-2 tablespoons of oil in a wide pan. When the oil is hot, fry the patties until they brown and become golden. Turn them over and fry them on the other side. If necessary, add some oil into the pan.
  1. Place the fried patties on a plate covered with kitchen paper to soak up any excess oil and serve warm. Enjoy your meal!
