Smashing Parsley Pesto

Smashing Parsley Pesto: Instead of the well-known and beloved basil pesto, mix it up and try this wonderful, verdant and incredibly healthy spread of parsley and nuts. Spreads are one of the most fun things to make, you can vary and change flavours to fit your mood. They also keep well in the fridge, so you can just pop them out with any meal to upgrade your plate!

Ingredients:

1 bunch of fresh parsley

2 cloves of garlic, peeled

Fresh juice of one lemon

1/4 – 1/3 cup olive oil

1/3 cup pine nuts

1/2 teaspoon salt

1/4 teaspoon black pepper

Variation options:

Use half a bunch of parsley and half a bunch of coriander, or replace the pine nuts with a different nut such as walnuts or cashews.

Instructions:

  1. Place the parsley, garlic cloves, lemon juice, pine nuts, salt and pepper into the bowl of your food processor. Pulse until almost smooth.
  1. Add the olive oil to the food processor and mix it in with a wooden spoon or a spatula. Then pulse 2-3 more times in order to make the mixture homogeneous and evenly blended.
  1. Taste the pesto and season as desired. If the texture is thicker than your liking, add a splash of cold water to it.
  1. Transfer the pesto from the food processor into an airtight jar and store it in the fridge.  Enjoy!
